Bird’s Nest Cookies for Spring and Easter

There was a bakery in the town where I grew up where they made these amazing bird’s nest cookies.  For years, I have tried to find a recipe or a replica somewhere, but have never had any luck. Today, I decided I would try to make my own version of the cookies. While they are not nearly as good as the ones the bakery made, these are not bad either. 🙂

Cookies

For the cookies, I used a basic raspberry thumbprint cookie I found on the internet. I doubled the recipe and made the cookies twice the recommended size.

After making the dough, I created 2 inch balls with a thumbprint in the middle.

I mixed some seedless raspberry jam with a small amount of water and stirred it until the lumps were gone. I then filled each thumbprint with the jam.

I baked the dough according to the directions and added a few extra minutes because of their size.  When they were done, I allowed them to cool while I made the icing for the next step.

Chocolate Icing

Once the base of the cookie was done, it was time to create the “nest.”  I made a batch of chocolate frosting from the Baker’s Unsweetened Baking Chocolate Bar package. I put the frosting into a decorating bag and created the “nests” by going around the cookie and few times and up a bit.

My youngest then added the jelly beans to look like bird’s eggs. I tried to get him to use a 4 different colored jelly beans in each nest, but soon realized that asking my 4 year old to count and pay attention to color was a bit much. 🙂

And that’s it! The Bird’s Nest Cookies for Spring and Easter were done and are ready for the party tomorrow.
